Koi Fusion Taco Cart

Dan and I have had the pleasure to have eaten the most craveable foods in the coolest restaurants, shacks and food carts over the past years so I've finally decided to blog about our eats. Lucky you! I want to start with Koi Fusion, YES, I said Koi Fusion.To any Portland local it is the savior to many late night appetite delights. I'd have to say that the Beef Bulgogi taco is my favorite.You get two of the most flavorful and fresh tasting tacos you have ever had.The sauce on it must be a sweet chili sauce that totally enhances the fresh cilantro leaves, cucumber and your choice of beef, pork, chicken or tofu. Hmmm, I'm getting hungry just thinking about it.

You also have to try the burritos. Same sweet chili saturation with cilantro, julianne cucumbers and a lime wedge wrapped in a what tastes like a homemade tortilla. Dan and I can't even wait to get home, we just sit in the parking lot and chow. Koi Fusion moves around, so you you need to keep up with them on Twitter – @koifusionpdx. They announce any specials and location every day. Most recently they have been parked up by PSU and by PGE park for different events. I wouldn’t be surprised if they show up at some street fairs over the summer. Keep on the lookout.
